Sourdough Bread via Yogurt
Yogurt-Flavored Bread for Bread Machine (1300g Loaf with All-Purpose Flour)
This recipe uses some plain greek yogurt for the tang. I have an XL bread machine, so its sized for that. When you make bread by hand, its sort of self correcting because kneading the dough on a floured surface is sort of self-correcting, the dough will automatically pickup exactly the right amount of flour. Since you can't do that in a bread machine, I weigh everything in grams precisely.
Ingredients:
Water: 350g
Plain Greek Yogurt: 150g
All-Purpose Flour: 700g
Instant Yeast: 7g (Instant Yeast is better than Active for bread machines)
Salt: 10g
Sugar: 20g
Olive Oil: 30g
Instructions:
1. Add Wet and basic dry Ingredients to Bread Machine:
Pour water into the bread machine pan first.
Add yogurt.
add salt, sugar, olive oil.
2. Flour and Yeast
Top with all-purpose flour.
Make small volcano in the flour for yeast, put yeast in the volcano.
3. Select Program:
Choose the basic or white bread setting. Set crust color preference if available (medium recommended).
Because bread is very sensitive to temperature because the yeast has to reproduce I always put in about a 30 minute delay for the water and yogurt to get to room temperature.
4. Start the Machine:
Close the lid and start the machine. It will mix, knead, rise, and bake automatically.
5. Cooling:
Once done, remove the bread from the pan and cool on a wire rack for at least 30 minutes before slicing.
